    口水雞

    材料:

      雞             1隻

      皮蛋            3隻

      粉皮            1包

      炒芝麻、炒花生及香芹粒   適量

    麻辣汁材料:

      醬油           8湯匙

      鎮江醋        2 1/2湯匙

      冷開水          4湯匙

      糖            2湯匙

      辣椒油           適量

      麻油            4匙

      花椒粉(用花椒粒捶碎)  1茶匙

      薑末、蒜末、芫茜末   各1湯匙

    做法:

     1.  雞洗淨,隔水蒸約十八分鐘,熄火,焗十分鐘後取出待涼。

     2.  皮蛋切粒狀,粉皮切成條狀,用滾水泡至透明狀,盛起再浸冰水,用筲箕盛起,瀝乾水分備用。

     3.  待雞涼卻後起肉,放在有深度的碟上,伴入皮蛋及粉皮。

     4.  將麻辣汁拌勻,沿碟邊倒入,加入麻油約4湯匙及辣油(分量視乎個人嗜辣程度而定)。

     5.  灑上炒芝麻、炒花生及香芹粒,如想有更重麻辣味,可再灑上花椒粉,即可品嘗。

    貼士:

     1.  蒸雞時要先於雞身內塗上薄薄的蜜糖,而且蒸雞的火喉要掌握得很好,雞要剛剛熟,蒸出來的雞才會嫩滑。由於每人家裡爐頭的火力不同,所以蒸雞時間要適當調整。

     2.  麻辣汁中的花椒粒一定要選上等及新鮮的才夠香(新鮮花椒粒呈深紅色且香味很濃)。
