    柚子風味瑞士捲
    【做  法】

    1.取一鋼盆倒入材料A拌勻,加入材料B混合拌勻,再加入過篩後的材料C攪拌均勻備用。

    2.取另一鋼盆,將細砂糖分次加入蛋白中,用打蛋器打發至蛋白呈現濕性發泡狀。

    3.將作法1與作法2互拌均勻,再加入溶化的奶油拌均勻備用。

    4.將作法3的麵糊倒入已鋪好烤焙紙的小平盤模型(21×25公分)中。

    5.將作法4放入以大火加熱燒開的蒸籠內,蓋上蒸籠蓋時需留一點縫隙,蒸約10分鐘後,再將蒸籠蓋完全蓋好,繼續蒸約15分鐘。

    6.材料F拌勻備用

    7.作法5蒸好時趁熱將烤焙紙撕開,先放在涼架上待涼,再移到壽司捲簾上,其上使用擠花袋平均擠入作法6,前端留取1公分,捲起後即可切塊。

    無油綠豆沙

    200公克

    B.柚子果醬

    20公克

    細砂糖

    20公克

    C.泡打粉

    2公克

    低筋麵粉

    16公克

    蓬萊米粉

    15公克

    D.蛋白 (3只)

    100公克

    細砂糖

    30公克

    E.奶油

    10公克

    F.溶化奶油

    20公克

    柚子果醬

    20公克

    綠豆沙

    200公克

    ( 1 公克 = 1 g )
